Zen Cat Bakery was a little seed planted when all the gluten-free breads and sweet treats on the grocery shelves tasted like cardboard. I started experimenting with alternative flours and converting some of my favorite recipes to wheat and gluten-free. With practice, the recipes have gotten mighty tasty, and my family and friends encouraged me to “take the show on the road”. I couldn’t have imagined a more fun endeavor (except for an extended yoga retreat!), balancing health, body, mind and spirit!

I am Angie Kenny, the owner of Zen Cat Bakery. I was diagnosed with a wheat allergy over three years ago and my “cure” is avoiding all wheat products and creating more balance in my life (i.e. less stress among other things). Though I am not vegan, there is a direct correlation between gluten-allergies and dairy intolerance. Zen Cat wants to appeal to everyone, and especially those with sensitive systems who cannot digest wheat, gluten and dairy products.

For me, and I would venture for most of us, it wasn’t effortless to eliminate wheat and gluten from my diet, but it has gotten easier – with more awareness, more demand for wheat and gluten-free products and just plain creativity in the kitchen. The choice has sometimes been: do I want to eat this really yummy slice of pizza, or do I want to feel my best tomorrow? There’s no question. Also my love for cooking and eating Indian food keeps me happy and gluten-free when I’m not indulging in a Zen Cat Chocolate Chip Cookie!
